Salmon Dinner

Directions:

1.Prep the salmon filets by removing the skin if attached

2.Coat filets with EVOO on both sides and season liberally with Backyard Spice Company Holy Mackerel 

3.Get a pot of water and boil 4-6 quarts of water. Once boiling, season with kosher salt

4.Add box of casarecce pasta and cook until past is al dente (10-12 minutes)

5.While pasta is cooking, use a grill pan or outside grill and cook the salmon until cooked, flipping once to cook both sides. Set filets aside if done before pasta. 

6.Add cherry tomatoes to a sauté pan with some EVOO and sauté until they start to blister

7.Once pasta is cooked, drain and coat pasta with EVOO and season with some more Holy Mackerel seasoning

8.To plate, add about 1 cup cooked and seasoned pasta to plate. Then add some cherry tomatoes. Get a ball of burrata cheese and break it over pasta and tomatoes dropping bits of cheese around the dish

9.Place salmon filet on top of pasta, cheese and tomatoes

10,Garnish with fresh minced parsley
